The proper Arabic is written all in the same way; but there are different ways to write local dialects (slang)
Local dialects can be written too but they will be of less use to you. Modern Standard Arabic has a written form and it is what you find in Academia, newspapers, books and any other published work. You may learn a specific dialect but that dialect will only be useful within its local context

The way to start is to learn the alphabet!
