After doing some research, I found that "Dumbledore" is a an 18th Century English word for "bumblebee". According to an article I read, J.K. Rowling wanted Albus to be thought of as wandering around the castle "humming" like a bumblebee. As for the symbolism, if you think of Dumbledore as someone who takes care of others, as he does in the books, you could argue that the symbolism of his name represents the development of his character throughout.
