What are the differences between RGB, HSV and CIE-Lab?

RGB colors are used for the computer monitor. All colors on the computer monitor have to be RGB, -Red, Green and Blue.

HSV are alternative colors for the RGB color model and more closely align with the way human vision perceives color.

The CIE-LAB color space is typically used when graphics for print have to be converted from RGB to CMYK. The CIE-LAB gamut includes both RGB and CMYK color models.
