There are far too many to name in just one answer. Some examples are parathyroid hormone that is released by the parathyroid gland that regulates calcium, the many hormones secreted by the thyroid gland that regulation metabolism, insulin and glucagon secreted by the pancreas that regulate glucose, the many, many hormones secreted by the adrenal glands, including adrenaline and noradrenaline that regulates the fight-or-flight response, among many others, the ovaries or testes, that secrete estrogen, progesterone, and testosterone. Plus, the pituitary gland, that secretes many hormones that causes other glands to secrete their hormones.
When under stress, there are many responses by the endocrine system, including the release of adrenaline from the adrenal glands, glucagon from the pancreas (that causes an increase in blood glucose), and the release of antidiuretic hormone from the pituitary (which causes water retention, which causes the blood pressure to increase).
