What is your question? I am confused. I read what you wrote about 5 times already.
If the original question is
x-(-1)= 11, then x= 10
I think this is where you are getting confused.
x-1= 11 IS NOT THE SAME AS x-(-1)= 11
You are right that x-1= 11 will give you x= 12. But x-(-1)= 11 will give you x=10. This is how. When you subtract what you are really doing is adding the opposite. For example, the opposite of 5 is -5 and the opposite of -2 is two. So, let me use 5 and -2 to illustrate my point.
a) 11-5 is the same as 11+(-5). The answer of course is 6.
b) 11-(-2) is the same as 11+2, which is 13.
So, coming back to the question at hand,
x-(-1)= 11 should be the same as x+1= 11. So, x=10
