Great question! You can subtract the amount of change the customer gives you from the total amount of the transaction, then give the correct change from the amount received. For example, if the bill is 20.37 and the customer gives you the 37 cents, subtract the 37 cents from 20.37. The bill is now 20.00. If you receive a 50 dollar bill the customer gets back 30 dollars. I will always remember the first time that ever happened to me. Additionally, until you master this technique, use paper and pencil as a precaution so you "see" how it works.
