If you are referring to the history of ancient Israel, there are 2 answers:
(1) The Hebrews who remained faithful to the God of Israel were strict monotheists. These Hebrews did not practice a polytheistic religion.
(2) Tragically, many Hebrews in ancient Israel slid into pagan practices and worshiped the Canaanite deities of Israel's pagan neighbors (e.g. Dagon of the Philistines, Chemosh of the Moabites, Baal of the Phoenicians, and Molech of the Ammonites, to name a few, in addition to golden calves and Asherah poles).
In summary, a remnant of Hebrews remained strict monotheists, while a large number slid in pagan polytheism.
