is v=Δd/Δt describing horizontal or vertical motion

Could be either, or both.

If it is strictly horizontal motion, then Δd/Δt is usually Δx/Δt

If it is strictly vertical motion, then the Δd/Δt is usually Δy/Δt

 

And if it is both, like the motion of a projectile, there will be a Δx/Δt component and a Δy/Δt component.
