Use of which or that...

Should I be using which or that? I thought "that" because the information that follows is the critical piece of information...

"The last year has been full of change and adjustments THAT represent a pivot in the event marketing portfolio and event activation strategies."

If removing the words that follow (the "that" or the "which") would change the meaning of the sentence, then use "that."

Other use "which" set off by commas.
