At the high school level, I would agree with Elizabeth that you would want to specialize. I just finished up my 14th year of homeschooling in Virginia. I don't know what is available in your area, but around here there are co-ops (both religious and secular) that you can join that employ either other knowledgeable homeschool parents or experts in a particular field to teach classes. You simply sign up for the classes you want for your child.
Another great option, depending on the personality of your child, would be online courses or video based courses. There are online schools (Potter, I believe is one) where you can get everything in one place, or you can shop around subject by subject - sometimes you can find free resources to build your own program...one example: there is a great series of videos on the entire periodic table which could be used as part of a chemistry program: http://ed.ted.com/periodic-videos
Look for homeschool yahoo groups in your area and ask the locals what they do for teaching high schoolers at home.
