In general, any line written in slope-intercept form looks like this:
y = mx + b where m is the slope and b is the y-intercept.
We'll rewrite the line in question so it looks like the above.
5x - y = 2
Add y to both sides:
5x - y + y = 2 + y
5x = 2 + y
Subtract 2 from both sides:
5x - 2 = 2 - 2 + y
5x - 2 = y
Put the y on the left and the other terms on the right (can do this since they're equal to each other)
y = 5x - 2 (in slope-intercept form)
The slope is 5 and the y-intercept is -2
