If 5 packets of almonds cost $2, then one packet of almonds cost 2/5=$0.40. 

Then 3 packets of almonds will cost:

3 ($0.40)= $1.20

 

The amount of changes she will receive is:   $10.00 - 3 ($0.40)= $10.00 - $1.20 = $8.80
