I usually do this using unit pricing techniques.
If 800 Australian dollars = 610 Euros, you can divide both by 610 to get the value of 1 Euro, which is needed for the next
step.
So 800/610 Australian dollars = 1 Euro
So 1.31147541 Australian Dollars = 1 Euro.......now multiply both by .753
So 1.31147541*(.753) Australian dollars = .753 Euros = 1 US dollar.
So .987564 Australian dollars = 1 US dollar divide by .98754 to get
1 Australian dollar = 1.01262 USD now multiply by 800 to get
800 Australian dollars = 810.09 USD
This looks like a lot of steps, but I feel it's less confusing than using proportions. Hope this helped.
