Le participe passé employé avec l'auxiliaire être s'accorde en genre et en nombre avec le sujet du verbe.
Par conséquent, ma cousine, ma tante et ma grand mère sont parties. Comme le sujet dans cette phrase est féminin pluriel on rajoute -es à la fin du participe passé.

You definitely used être correctly ---bravo for using "sont" with "parties" ---partir is an intransitive verb and must use être in passé composè---and parties is correct because verbs using être for passé composé must have a participle (partir) that agrees in gender and number.

all the subjects on the sentence are feminine (genre feminin in French); therefore parties, instead of partis is correct
