A traditional map in paper or digital format (.png, .jpg, or .pdf most commonly) displays geographic information in one "flattened" file. Using a GIS application allows you to see each individual layer as a standalone dataset. For example, a map of a state park or national forest may show parking lots, hiking trails, and roads. You would be able to run analyses or visualize each of these three layers separately. You would also be able to export a different "printed" map in a digital format (.png, .jpg, or .pdf).
