ArcGIS is an umbrella term for the softwares developed by ESRI. It is the name of a suite of different softwares. ArcMap is the name of the software that falls under ArcGIS. A good example would be Microsoft Office and Microsoft Word. Microsoft Office is the name of the Suite that includes MS Word, MS Excel, MS Powerpoint etc. Likewise, ArcGIS is the name of the suite which includes, ArcMap, ArcCatalog, ArcAdministrator, ArcScene etc.
