Hello,
I think this is a great question to ask. Before I get into some ideas I would like to first say to choose a topic that you are really passionate about.
As for remote sensing the idea is understand areas on Earth without ever having to step foot there or be able to process information from imagery as efficiently as possible. That being said some of the best projects that I have seen pertain to wildlife management application. This could entail how to identify various types of habitat or a way to map out forest under story. The idea behind this is a way to help conservation experts come up with more effective management strategies.
Temporal projects are good as well. Creating algorithms that can chart through time to help understand Earth processes. When I was starting out on my GIS career I did a temporal map showing the reforestation of mine and how long it took for the ground to become stabilized again.
You can also use remote sensing to create action plans for disaster area and create plans and models on how to most efficiently and effectively get resources distributed properly.
One of the biggest thing is to create algorithms to create land cover and land use maps. There is a huge science in this and it is always evolving. The University of Connecticut has a Department dedicated to performing this function to help understand urbanized growth.
