I've never used a graphing multimeter before, but I imagine the bandwidth (frequency range) of acceptable input signals that can be sampled with good signal integrity would be much higher in an oscilloscope. Most scopes I've used can easily measure signals in the MHz range. A multimeter does not usually have the right circuitry to sample such at such high frequencies and still produce a clean, noise-immune signal.
