A lot of adjectives can be changed into AABB forms, but not all. When you do so, it sounds more vivid and presents a more compelling picture of the adjective.
There are certain rules that come with it, though. A lot of common modifications for adjectives, like 很, 有一点儿, 太...了, can not be used with AABB form.
See these examples:
correct: 很热闹
incorrect: 很热热闹闹 (X)
correct: 有一点儿安静
incorrect: 有一点儿安安静静(X)
correct: 太开心了
incorrect: 太开开心心了(X)
