If I understand your question correctly, you'd like examples of art wherein writing (text) has been incorporated and then erased, but left with visible traces for effect. The only artist that immediately comes to mind is Jean Michel Basquiat, who incorporated text in his paintings in various ways, including palimpsest and crossing out the words. He once explained that crossing out words or erasing them draws more attention to them. Other than that, I really can't think of other examples of palimpsest in art (except my own, which is why I was drawn to your question).
