The combinations which will result in a difference of 1 will be
die 1   1   2   3   4   5     die 1   5   4   3   2   1
die 1   2   3   4   5   6     die 2   6   5   4   3   2
 
So, there are 10 possibilities out of 36, which is 27.8%, or a chance of 1 in 3.6

What About NOT Rolling The Difference of 1?

In that case, we merely subtract 27.8% as a decimal from 1
 
So, 1 - 0.278 = 0.722 = 72.2%, or 1 in 1.4
