Let a = the number of apples and p = the number of peaches.
a + p = 300
a/p = 7/8
So a = (7/8)p
Substitute (7/8)p in place of a in the first equation:
(7/8)p + p = 300
(15/8)p = 300
p = 300*(8/15)
p = 160
a = (7/8)160 = 140
If you sell 50 apples and 40 peaches, the new ratio is:
(a-50)/(p-40) = (140-50)/(160-40) = 90/120 = 3/4
