I honestly would say it depends on the "color-by-number" set up. If you are wanting to learn details and proper blending then a simple color by number with specific sections is not helpful. Learning to blend colors and basic color theory is more helpful to first learn and then you could take that knowledge to your color by number and don't be afraid to blend over the sectional lines. But I would not rely on color by number for real artistic work. Branch out and see what you can do, you might surprise yourself.
