There are certain types of legal work that require less sleep than others, i.e.g. Simple correspondence or reading in Law School. You have to learn to function while you are tired because the BAR exam is a marathon.
I agree with you, though, that for optimal performance, you need sleep. I did not touch a book the day before the BAR Exam because if I hadn’t learned the material by then, cramming would not help.
