When you are using an assimilated prefix, you are changing the last letter of the prefix to match the first letter of the base word. An example would be when you add the prefix ad to the base word sign, the new word would be assign. Consonant/vowel alternations is when you are switching one vowel for another to make a new word. An example would be sing to sung to sang. They are both similar because they are exchanging letters when creating new words. They are different because you are changing a letter to add a prefix versus changing one letter to make a new word.
