When we say that a probability is 1/2, we do NOT mean that every time we flip a coin twice, we will get one head and one tail. What it does mean is that if we continue flipping the coin infinitely many times, the ratio of the number of heads to the number of tails will converge to 1:1. This assumes the coin is fair, of course.
