This is going to sound like a cop out, but as many as you need to understand how the passages work and how to decipher them as you read them. I took 3 full length practice tests and did a few hundred question bank questions from AAMC and Kaplan. It is really important that you be able to pick out what you think will be important from a CARS passage (or any other passage) as you read it. For me that was 3 practice tests, for others it may be more or less. The only way to get that feel for the style of the test is to practice.
