Hello Erin,
First off, saturated fats are known as the "bad" fats. These are the kind of fats that can clog up your arteries. This is because if you look at the structure of a saturated fatty acid, it contains a long carbon chain without any double bonds which would be found in UNSATURATED fats (the good kind). Because saturated fatty acids have no double bond present, they don't have a kink within their structure which makes it easier for the carbon chain to stack/ compact together. This is why you see animal fat tend to form a solid clump when left out at room temperature. This is also why unsaturated fats (which contain a double bond within their structure) remain liquid at normal temperature as well.
