Hi! Funnily enough I was actually making Fluffy Pancakes before I saw this. Here’s a good recipe that I use and highly recommend. To start, you’ll need three egg whites and 1/4 teaspoon of cream of tartar. Put those in a bowl and whisk them with an electric mixer until they form stiff peaks. In a separate bowl you need to put one egg yolk, 1 1/4 cups of milk (whole milk is best), 1/2 teaspoon of vanilla extract (I like to add a tiny bit more so I put around 3/4 teaspoon of vanilla), and 4 tablespoons of melted butter unsalted (Half a stick of butter). Whisk these together and put them aside. Then in another bomb you want to mix the dry ingredients. For this you will need one and a half cups of all purpose flour, 3 tablespoons of powdered sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Whisk these ingredients together and you’re ready to combine them. First put in the dry ingredients into the egg whites that you previously prepared. Then pour in the wet ingredients and mix it all together. If you want to make thick fluffy pancakes you will need a ring mold however if you do not have one you can either create one using a tuna can or one that’s similar or you can of course buy one. Of course this is not necessary but it is fun. After your batter has been prepared spray down a skillet with cooking spray or oil and pour in the batter (I use an ice cream scoop for this part just because it’s easier for me). If you have a ring mold you need to put it on the skillet and pour the batter into it about half way full. Make sure your stove is on medium-low heat. Cover the skillet with a lid and let them cook for about 5 minutes or until they are golden-brown on the bottom. After this flip them over using tongs (if you’re using a mold) or with a spatula. Cover and cook again for another 5 minutes or until golden-brown. Transfer your pancakes onto a plate and remove the mold if you’re using one. Serve with whatever you put on your pancakes and enjoy!
