(25-x) = the amount of the 80% solution

20X+2000-80X = 875

60X = 1125

X = 1125/60 = 225/12 = 75/4 = 18 3/4

25-X = 25-18 3/4 = 6 1/4

(25-X) = 6 1/4 quarts of 80% solution
