"Brot" is a "das"-word. Therefore, it has to be "wie geschnittenes Brot". This is only a fragment of a sentence, but I imagine the complete sentence would be "Es sieht wie geschnittenes Brot aus." or "Es riecht wie frisch geschnittenes Brot.". Either way, it has to be "wie geschnittenes Brot".
