What are some good starting points to begin writing songs for someone who possesses limited theory knowledge and playing experience (beginner)?What are the essentials skills and knowledge for creating your own music?

Start with honesty! people will connect with YOUR Truth... because it will hit home with them. And when the hatters come, they'll find that want you sing about is really YOU. Sing about the good, bad and the ugly... people need the rollercoaster ride of emotions ESPECIALLY if you're the Artist. TIP: if you're a little scared to say it out loud... definitely USE IT!
