I guess you could say that it's never too early to learn, but a lot of the skills you'll need for the GMAT will be honed throughout your university career. The content of the exam is not very difficult (mathematics up to algebra and geometry, a bit of statistics, english grammar, etc.). What the exam is really testing is your problem solving skills. You'll get plenty of practice with that in college. So I wouldn't worry about preparing specifically for the GMAT just yet as you'll be indirectly preparing by completing your course work.
