Made Career Move towards something more passionate about but gave up role that was still better

PLEASE HELP!

Scenario: I had 2 job offers, chose one and am thinking I made the wrong decision. I made a recent major industry change to something I'm passionate about but the actual job role isn't what I'm good at. I've been in the packaged food business for the past 12 years (as a Sales Director) & have always been looking to get into a sustainably based company/role and would one day like to start my own consulting business for sustainability coaching or consulting (in food or water industry). I completely changed careers and accepted a role as a conservation manager in the water industry. I had a competing offer that was $50k/year more, flexible work from home, really got along w/the manager, was focused on vegan/vegetarian based products so sustainable, & would have been able to keep the "Director" title I had but wouldn't have been managing people. The job I accepted I found out after week 2 that I'm the 5th person in this position in just 2 years, the role manages a team of 5 (1 is being forced into retirement, another teamember just put in 2 weeks) but longevity with the company is really long actually it's just been a position in flux, there's no WFH at all which has been really stressful on my husband/family, the role itself is more administrative approvals and isn't as big picture as I was led to believe on conservation program implimentation/design. I can't see myself staying in this career for too long, just utilizing this as a stepping stone to get experience in the sustainability space since my everyday role conserves water. I really don't like working in the office & am nervous with COVID. I was willing to accept this job because I thought this was a great stepping stone to get into the sustainability industry but this role doesn't allow anytime to focus on growing my business which is really what I need to be doing. I can't fully quit a full time job to focus on starting my own business though as my husband needs help with the finances for our family. I like to believe in signs & every time I interviewed with the conservation manager role it started to rain (in california in the middle of a drought) but I already made this big leap & there's so many aspects of this role that I don't think can help me get closer to starting my own sustainability practice.

Please help I need an outsiders opinion because I can still reach out to the other company at this point and see if the other job is still available but my window of opportunity won't stay open long. THANKS!
