How can I change my Excel data table so that my 40 columns become 40 rows and my 8 rows become 8 columns? How do I do that to include the headings?

You have 8 rows plus a row of headings, and 40 columns and 1 column of headings.

select all 9 x 41 cells, right-click and Copy

then right-click in a blank cell below your data.

choose Paste Options > Transpose

that should copy the data into 9 columns of 41 rows, including the headings.
