Generally speaking, "Western Music" refers to the music and musical system of Europe and the Americas (mostly North and Central), and "Non-Western Music" is everything else. At least this is how Donald J. Grout and Claude V. Palisca define it in the 4th Edition of A History of Western Music. Hope this helps!
