Best and easiest way I have found to modify the Touchbar on a Mac is to use a 3rd party program called BetterTouchTool (https://folivora.ai/). It is a simple to customize keystrokes, mouse-strokes, touchpad, and touchbar gestures and function.

There are other tools out there, but this is the best way I have found.
