The safest way is to click on the Apple icon at the top left of your screen, and click "Restart..." in the drop-down menu. This will cause all programs to save their data to disk and reboot the computer.

If your computer has become non-responsive, you can hold the power button down for more than 10 seconds until the computer shuts off. Then, press the power button normally to start it up again. Note: this method may cause data loss.
