Yes you can, it is in the Manage tab there is Object styles, in there is a category called Structural framing, if you expand the (+) box, then you can see there are more inside of that, there is Girder, Joist, Purlin, and others. To find which category your beams belong to, select the beam category you want to change, look in the properties group called Structural, then in that group there is a parameter named Structural usage look at that one then you will know which one to override in the Object styles. Click apply and it will change all of them in the project everywhere at once. Now if you want to just override the beams for 1 single view, do the same thing but use "Visibility/Graphics Overrides" found in the view tab or in the properties panel when empty space is selected.
