So to briefly answer this, you aren't using счастливый as an adjective in it's traditional sense in this sentence. Anytime someone "is" something, it takes instrumental case. You aren't describing the object, you are more describing a state of being of the object. Another example would be "I would be happy to help!" in Russian it would translate with instrumental "Я бы счастливым помочь!". This is because you are explaining your state of being.
