Your question is a little vague, Many people left at different times. Some, like the Donner Party, were caught in winter storms.
I would suggest spring months. The harvest would have been taken in the fall. People could stock up food for the journey, as well as save some money from the sale of their produce. Winter is no time to travel by wagon. Spring would bring better weather, and farmers who were leaving would not plant crops. Spring also leads to summer, a better season in which to travel. Unless, of course, they were traveling through the Southwest!
