I guess it depends on how detailed you want your textures to be. Generally speaking, you keep the quality good, but not at the expense of long wait/load/render/disk times. Start with your expectations of your textures. What will you be displaying them on? Film? Web? Console? From there, determine your pipeline needs regarding resolution/quality needs.
