You can use digital samples and play all the instruments on a keyboard. Use high quality, real to life, sounding samples, not cheap poorly e.q'd samples. Or, find young fairly skilled musicians that are merely looking for the opportunity for "experience" recording. You will have to take more time, and be more patient, but if you don't want to hire proven pro's, that's really all you're left with. Many young, up and comers, are more than excited to record for free. Try your local High School or Community College in the Music departments looking for possible musicians to record your projects. If you write music that can be associated with a local Charity, or somehow is linked with a "Benefit" of some kind, you may attract accomplished players that way? If you are attempting pro level demos, or trying to get contract attention, you need to bite the bullet and hire pros. Make sure you ask for resume's and music samples first. If you are just doing it for fun, nothing to lose by recruiting young amateurs.
