You can sign the word "sign/signing" in any direction (forward or backward). It is just a preference.

This might be a stupid question, I really don't know...
For a sign like the one literally for "sign/signing"- does it matter which direction you draw the circles with your fingers (toward yourself, or away?) My guess is probably not, probably overthinking it, but I don't know for sure and would like to.
