While להגן (le-hagen) can mean both protect and defend, לשמור (li-shmor) can also be used to mean “protect,” along with “keep, watch, observe.”

Interestingly, both protect and defend come from the same shoresh, or root, in Hebrew, l'hagan (lamed, hay, gimmel, nun. Sorry, I don't have Hebrew letters.) Both protect and defend are written hagan, (hay, gimmel, nun.).
