As the word "cheese" in Hebrew is a feminine word all of the adjectives used will be in their feminine forms as well. Some examples are below:
Salty cheese = גבינה מלוחה "geh-vee-nah meh-loo-chah"
Sweet cheese = גבינה מתוקה "geh-vee-nah meh-too-kah"
Sour cheese = גבינה חמוצה "geh-vee-nah chah-moo-tzah"
Spoiled/Rotten cheese = גבינה מקולקלת "geh-vee-nah meh-cool-kellet"
Hard cheese = גבינה קשה **(this carries the same colloquial meaning in Hebrew i.e. "hard cheeses") "geh-vee-nah kashah"
Soft cheese = גבינה רכה ** "geh-vee-nah rah-cha"
