im not sure how to find the yield percent, i dont know any good formulas to use.

The 12.5 pounds are the pistachios in their shells.  When you clean them, you remove the nut meat from the shell.  The nut meats weigh 5.44 pounds, the rest is the weight of the shell.  "Yield" here refers to how much nut meat by weight do you get from a certain weight of pistachios in their shells.
