I think the answer depends on the precise meaning of much of in the context of the question, that is, whether the reference is to geographical territory, population size or number of sovereign nations. If it's the last, then just judging by how many current countries of South America have Spanish as their official language, one would be compelled to agree with the search engine result that Sherry S. reports here.
 
But if if the topic is either territory or population, and in fact this relates to your second question which you put in the "Description" field (and thus I suspect your two questions were meant to be related), Brazil, originally colonized by Portugal, has the majority of the population of South America and occupies a little less than half of the total area of the continent. So if we fudge the standard meaning of much of in which normally "X is much of Y" implies that X must be the greatest part (i.e., more than half) of Y, we could indeed say that Brazil takes up "much of" the landmass of South America.
