There are several ways to organize emails. Depending on the number you receive on a daily basis you can flag them (flag tool) or use the color codes. What I used to do as an executive assistant was create a pst file on the right side of the outlook window and basically use a "filing system" to place emails in a separate folder by date or topic. The way you set that up is completely up to the type and context of the emails you receive.
