(EP Weight/Total Weight) x 100 = Usable Percentage Yield
(910/1500) x 100 = 60.67 or about 61%

the chicken used in class weighed 1.5 kg (1500); the trimmings and scrap weighed 590 g. therefore the AP weight =1500 g and the EP weight =910g. What is the usable yeild percentage for the chicken
